2 cups torn fresh spinach leaves <br />
3 tablespoons sour cream <br />

Cook the potatoes in boiling water for 10-15 minutes or until tender. Steam the spinach in a steamer basket over boiling water for 3-5 minutes until tender, drain. <br />
Hollow out a small cavity in the top of each potato with the tip of a potato peeler. Place the potato pulp in a blender of food processor with the spinach, sour cream, cheese, lemon juice, basil and garlic. Process until blended. Season to taste with salt and pepper. Spoon the mixture back into the hollowed out potatoes, mounding it on top. Serve as is, cover and chill to serve later the same day or heat in a lightly greased baking dish, covered in a 375-degree oven for 20 minutes or until hot.<br />

In a large Dutch oven or stockpot, heat 1½ tbsp. oil. Brown meat, remove from pan and drain fat. Add remaining oil to pan and saute onion, bell pepper and garlic for 3 minutes. Stir in cooked beef and the rest of the ingredients, except for the corn. Bring to boil; reduce heat. Simmer partially covered for 35-45 minutes or until vegetables are tender. Stir in corn; cook 5 additional minutes. Serve in bowls and top with shredded cheese and sour cream if desired. Makes 8 cups.<br />

Squash Provencal<br />
4 Frieda&apos;s Sweet Dumpling, Delicata or Golden Nugget Squash <br />
1 1/2 cups zucchini, chopped <br />
2 cups tomatoes, chopped <br />
2-3 Frieda&apos;s Echalions, peeled and sliced <br />
1 clove garlic, minced <br />
1 tbsp. Frieda&apos;s Fresh Basil, chopped <br />
1/2 tsp. salt <br />
1/4 tsp. pepper <br />
3 tbsp. mozzarella cheese, shredded <br />

With a small, sharp knife, cut two slits in top of each squash. Place squash in a microwaveable dish with 1/4-cup water, cover with plastic wrap leaving one corner vented. Microwave on high for 14 minutes, turning once halfway through cooking time. Squash should be tender when pierced. Let stand, covered, 5 minutes. In another shallow dish, stir together the zucchini, tomatoes, Echalions and garlic with 2 tablespoons water. Cover loosely; microwave on high for 4 minutes, stirring once. Drain mixture well. Slice-off tops of squash and carefully scoop out seeds and discard. Then scoop out pulp, leaving shells intact. Combine pulp with cooked vegetable mixture, basil, salt and pepper. Spoon mixture back into shells cover with plastic wrap and microwave for 2 1/2 minutes, turning once. Top with cheese; microwave 2 1/2 minutes more. Makes 4 side-dish servings. <br />

Ginger Cream:<br />
1 cup (8 ounces) soft cream cheese <br />
2 tbsp packed brown sugar <br />
2 tbsp orange juice <br />

Skewers:<br />
About 6 to 8 med-ripe Donut® Peaches, peeled<br />
1/3 cup butter or margarine, melted<br />
2 tbsp packed brown sugar<br />

For the Ginger Cream, beat together the cream cheese, brown sugar, orange juice and ginger in a small bowl with an electric mixer at medium speed until well blended. Chill, covered, until serving time. Makes about 1 cup.<br />
<br />
Halve the peaches horizontally. Twist the halves in opposite directions to separate. Remove the pits. Cut each piece in half again. Thread peach wedges on 4 or 5 barbecue skewers (leave a little space between each piece for even cooking). Stir together the melted butter and brown sugar in a small bowl. Brush the peaches liberally with the butter mixture. Arrange the skewers on a lightly oiled grill tray or broiler pan. Grill for 6 to 8 minutes, turning once and brushing several times with the butter mixture, until peaches are hot and glazed. (Or, broil 4 inches from the heat for 6 to 8 minutes.) Serve hot with Ginger Cream. Makes 4 or 5 servings.<br />

Grilled Purple Asparagus with Camembert Sauce <br />
1 – 1 ½ lbs. purple asparagus, stems trimmed to ½ to 1 inch  	     <br />
Olive or vegetable oil 			     <br />
Salt and Pepper to taste 		<br />
4 oz. Camembert cheese 			     <br />
1 tbsp. butter 			     <br />
¼ cup dry white wine or chicken broth<br />
1 tbsp. cornstarch 			     <br />
½ cup light cream or half-and-half	<br />
1 tbsp. minced fresh chives<br />

Arrange the asparagus on an oiled grill rack or broiler pan. Brush with olive oil and season with salt and pepper. Grill or broil for four to six minutes or until soft and slightly charred, turning once. Transfer to a warm platter. Remove the rind from the Camembert and cut into chunks. Cook the butter in a medium skillet until it begins to brown. Combine the wine and cornstarch and add to the skillet. Bring to a boil. Reduce heat to low and stir in the cream and chives. Cook for two minutes, stirring frequently. Stir in the cheese and cook until it melts. Serve the sauce over the asparagus.<br />
